Assembling the Pizza

After the dough has been flatten to desired thickness lightly drizzle olive oil over the surface of the dough. This allows the toppings to cook on top of the pizza. Add sauce (see pizza sauce recipes on main page) or for variety, omit the tomato sauce and make "white" pizza by uisng different types of cheese.
Next mince garlic and spread it on top. (I use a garlic press). Add salt, pepper, oregano, and basil to taste. Or, add your favorite herbs and spices.
Put a heaping handfull or two of shreaded parmesan and mozzarella cheese on top.
For toppings the rest is up to you, anything goes, sliced peppers, onion, olives, mushrooms, pineapple, pepperoni, sausage, ham, hamburger, and best of all anchovies (about one per slice don't over do it).
